About Chef Scott


Chef Scott has been working in the restaurant business his entire life.  He has cooked Chinese, Vietnamese, Thai, and Sushi cuisine.  He started his culinary journey in the US in 1999 at the famous Breakers Palm Beach Resort in Palm Beach, FL. He opened the 5-Star Asian Fusion Cuisine Restaurant, Echo. 


After several years of success, he was recruited by a fellow chef to come to Ocean Springs, MS for a visit.  He fell in love with the community and their love for fresh quality sushi.  Six months before Hurricane Katrina, Chef Scott opened the restaurant Blowfish on Government Street in Downtown Ocean Springs with another Chef. 


Eventually Chef Scott decided to open his own restaurant where he could serve the finest quality sushi on the Gulf Coast.  People always ask Chef why he left a five star resort in Palm Beach to come to a quant community like Ocean Springs.  Chef said that he enjoys teaching people about fine sushi and he wanted to create a unique culinary experience for the people of Ocean Springs.  He blended his traditional sushi flavors with a unique Southern flair to create what he calls a "Redneck Sushi Bar".


Chef Scott has cooked for many celebrities including  Celine Dion, Sting, Vince Neil, and Mötley Crüe.  Chef puts his heart and soul into every dish he serves.  Whether it is a sushi roll and sashimi for a celebrity diner, or a bento box or signature roll for a local family, he believes you should put forth the best quality ingredients.
